Oh, my goodness. That’s just beautiful. I just gave myself a little tutorial on hard wheat and soft wheat. I didn’t know about the different protein content. And though I’ve heard of winter wheat all my life, I thought it only referred to the growing season. I didn’t realize that the grains actually are harder. Who knows? I may have thought that “hard winter wheat” just meant a wheat that could survive a hard winter! 🙂
